Designing With Flowers: Using Fresh Flowers to Decorate Your Cake

Dear Readers:

When designing Mr. Trumps wedding a few years back, we used one of the most beautiful sugar floral cakes I have ever seen. I liked that it was both dramatic and simple (well, my idea of simple anyway). Another client of mine saw this cake and asked to do her version covered entirely with fresh flowers. I explained to her that what made this cake so unique was that the flowers were made out of sugar, thus it would not have the same effect with fresh flowers.

I know this difference could be a matter of budget, but I personally believe that fresh flowers have no place as decorations on cakes. My good friend, the cake goddess Sylvia Weinstock, is in 100% agreement with me. We think fresh flowers should be kept for centerpieces and never paired with a tasty cake. If you can’t eat it, don’t use it.
